Sourced from Southern Queensland rum barrels displaying a smooth caramel and burnt sugar profile.
Use 100g per litre of spirit for general use, we have found that 2 soakings gives the best results. If you decide to use the chunks for a 3rd soaking we recommend also using an essence.
Method:
Entire 500g with 2.5 litre of spirit for 6-8 days and strain
Add 2.3 litres of spirit and leave for 10-24 days and strain
Add a further 2.3 litres of spirit and leave for 5 – 6 weeks, best with an essence.
